Why Low Glycemic?

  

The Breakfast side-effect

Have you ever had a breakfast of waffles or pancakes or other comfort food and notice you are hungry an hour later? This happens with typical breakfast foods; think cereal, bagels, toast (even whole grain), oatmeal, certain fruits, or pop tarts. Most gluten free products fall into this category too. The body treats them all the same, just as if we just ate a sugar cube.

Those starchy carbs that taste so good, quickly break down into sugars that are rapidly transported to your blood, ending with a steep rise in your blood sugar. Your amazing body realizes that sugars are needed for energy, so a cascade of internal workings removes the sugar from the blood to put it to good cellular use or into storage for later use.

Insulin is one of the homones needed for this to happen. The amount of insulin needed for the job depends on the amount of sugar in the blood. The pancreas sends a cascade of insulin to the rescue, lowering blood sugar rapidly, leaving us feeling hungry, irritable, craving, and with low energy. If this is your routine way of eating, you become at risk for health concerns like type 2 diabetes and obesity. Insulin rise is alo linked to inflammatory reactions seen in all chronic illness. 

Most gluten-free foods in the market have a high glycemic index

But not all carbs are created equal. This is where the term "glycemix index or load" comes in. The index runs from 0 to 100. The higher number means a food causes a sharper rise in blood sugar with a sharper decline in energy. A food with a low glycemic index provides a slower, more sustained rise in blood sugar for lasting energy. This slow rise can also have beneficial effects of feeling fuller longer, decreasing food cravings all day long (especially if you start the day like this) and may even help you lose weight. And let me state again, that most gluten free foods are high glycemic - think rice flour, sweeteners, tapioca. 

Low glycemic and slowing blood sugar rise

There are a number of ways to create low glycemic meals and snacks. Choose low glycemic carbs, which are the ones that are less starchy like buckwheat, quinoa, amaranth, millet and teff. Adding quality protein, fiber and fats to the carbohydrates also slow down the blood sugar rise. Good examples are nuts, seeds, eggs from free chickens, avocadoes, coconut or olive oil and grass fed butter.

How we started

Welcome to Pink House Products where we believe that breakfast should be the most important meal of the day. Our goal is to elevate that meal by producing nutrient rich, gluten free, low glycemic breakfast mixes that are great tasting and easy to use. After years of research and development, that goal has been reached. We are now ready to offer these recipes, field-tested on friends and family, to the general public. 

These recipes have gone through an evolution over the past 40+ years. The story begins with discovery of a waffle iron in a barn sale in Western Massachusetts, evoking childhood memories of Grandma's weekend waffle breakfasts. Waffle iron in hand, the family tradition of weekend waffle breakfast continued, starting with whole grain ingredients.

Gluten-free wasn't good enough

As life would happen, health issues eventually surfaced. Gluten intolerance required the need to develop a gluten free recipe. Initially the recipe incorporate the usual gluten free alternative flours, like rice and corn flours. These waffles were enjoyed for several years until a pre-diabetic condition forced more rethinking. Time passed without our traditional Sunday morning waffle breakfast shared with family and friends. 

  

Careful examination of the gluten-free commodities on the market revealed the dominance of sweeteners, as well as high glycemic flours like rice and corn, to render the products palatable. Our new waffle recipe needed to eliminate the high sugar content as well as remain gluten-free. Gradually the recipe took shape and the results met the standards of good taste, rustic texture, familiar smells, and that feeling of contented fullness. Family and friends again became guests sharing the new recipe, urging us to make this available to the general public.

More satisfied and less cravings after!

  

The final product when mixed with the liquids and fats of your choice, leaves room for the addition of traditional toppings, such as maple syrup and fruit, without the usual sugar spike common to other gluten free products, leaving you satisfied for hours. When we start the day with a breakfast like this, we elevate our whole day as well as our metabolism. You may discover you are eating healthier with fewer food cravings throughout the whole day. And, of course, you can enjoy these products any time of day.  The leftover waffles can be refrigerated or frozen for later.  Pop then in the toaster and top with your favorite jam and nut butter for a healthy snack.

And yes, we really do live in a pink house!

Buckwheat

We are passionate about food that tastes great and is good for us too. It has taken time and discernment to find the ingredients that have made it into our products. Our priorities are gluten free, nutritionally rich, delicious, real food, and organic and non-GMO when able. We wanted to purchase from local sources, but in order to meet the gluten free standards, had to reach outside Maine. Hopefully, as demand increases, local sources will become available. All companies we have a relationship with have sustainable business practices where the employees are treated well. All ingredients, except for the spices come from the US.

Our individual ingredients are gluten free, but we have taken it a step further to ensure the lowest levels of gluten less than 10 ppm ( FDA standards are 20 ppm). Our finished products go through random, independent third party testing for gluten content.  

The Buckwheat Flour is from Organic Merchants, a family owned, certified gluten free business in Colorado. Buckwheat is rich in protein, calcium, and magnesium and linked to heart health and lowering cholesterol. For those interested in eating for your bood type, buckwheat is beneficial for those with type O and A.

Many of our ingredients come from Bob's Red Mill where they test products for gluten and mill and package in a gluten free facility. Almond flour is a great gluten free alternative to flour in recipes, loaded with protein to balance blood sugar spikes. Millet is one of the less starchy carbohydrates keeping our blood sugars balanced while adding natural sweetness to the mix. Millet, along with Oats is beneficial for those with bood types A or AB. Potato starch is known as a resistant starch, which may help to lower blood sugar spikes. Arrowroot is a non-GMO easily digested starch with a high fiber content. It can add crunch when used in recipes. Pea protein and rice protein powders deliver essential amino acids for added protein value.

Our organic spices are from Frontier Coop, a member owned sustainable business. Cinnamon is anti-inflammatory, may prevent diabetes, and supports digestion. Ginger is anti-inflammatory, good for digestion and may decrease pain from arthrtis. Nutmeg is also anti-inflammatory and enhances brain function.

For a crispier, richer tasting waffle:

Use yogurt, kefir or buttermilk as liquid for your waffles.

For added fiber:

 Top with ground flaxseeds, walnuts or any other nut.  

Enhance the anti-inflammatory quality of your waffle:

Use colorful berries like raspberries, blueberries, blackberries, or strawberries.

Deepen the color and taste of your waffles:

  Use grass fed butter in place of oil
